  • Coconut Milk (Canned)250ml
  • Heavy Cream100ml
  • Sugar70g
  • Egg Yolks3 large
  • Toasted Coconut Flakes40g

Instructions

    Steep toasted coconut in hot cream/coconut milk for 30 mins, then strain.

    Whisk yolks and sugar. Temper with warm coconut cream.

  3. 3

    Cook gentle custard until reaching 82°C.

  4. 4

    Chill thoroughly, freeze 24 hours. Process on Gelato.
