  • Egg Yolks (3 large)54g
  • Sugar70g
  • Whole Milk300ml
  • Heavy Cream150ml
  • Vanilla Bean1 pod
  • Dark Chocolate (mix-in)50g

Instructions

    Whisk egg yolks and sugar until pale and thick.

    Heat milk and cream with vanilla bean until simmering.

    Slowly temper hot milk into yolks while whisking constantly.

    Return to pan, heat on low until custard coats a spoon (80°C).

    Strain, cool completely, freeze 24 hours.

    Process on GELATO. Drizzle melted chocolate during final spin.
